For the past 50 years health guidelines focused on avoiding fats to prevent heart disease while missing the bullseye: refined carbohydrates. Now health guidelines are changing to limit sugars, refined carbohydrates that are implicated in the degenerative diseases of modern civilization, and consumers are rapidly shifting to low-carbohydrate diets. But is there science to support low-carbohydrate diets? For what conditions are they effective? With reducing carbohydrates, interest is also renewing in the ancient practice of fasting. Simply shrinking the eating window allows the body time and energy to focus on cleaning out and recycling damaged cells and has a multitude of health benefits for many conditions. Dr. Painter discussed the types of fasting and how this totally free eating pattern can boost health tremendously. This class gives an overview of the history of, definitions for low-carbohydrate diets and fasting, and a summary of the health implications of both. An excellent update on the most recent research for both beginners and experts alike!

Learning Objectives: 
At the conclusion of this program, participants will be able to: 
  1. Define a low-carbohydrate diet according to the American Diabetes Association, the Academy of Nutrition and Dietetics, and scientific literature, with examples of popular diets that are low-carbohydrate
  2. Discuss conditions that would most benefit from a low-carbohydrate diet and best practices for counseling clients beginning a low-carbohydrate diet
  3. Counsel clients on the four different types of intermittent fasting
  4. Compare the effectiveness of intermittent fasting to continuous energy restriction for weight loss and blood glucose management


Jim Painter, PhD, RDN, is Dr. Jim Painter is an Adjunct Professor at University of Texas. His current research interests includes heart disease and mindful eating. Jim consults for Sun-Maid Raisin Growers, Paramount Farms, and the National Dairy Council, and he currently serves on the American Heart Association’s Eat Well Task Force and is the Nutrition Advisor for Sugarwise.  He worked for Marriott Corporation in the 1980s, taught at University of Illinois during the 1990s and at Eastern Illinois University until 2013 and he has over 100 peer-reviewed publications to his credit.
