We all face the same issues when we eat out, that portions are far bigger than we can or should consume. This is a fairly recent phenomena -in the past 20 or 30 years, and it is probably largely responsible for the obesity epidemic. Most people are not aware of the volume of food they consume and this lack of awareness often leads to overconsumption. Dr. Painter will illustrate with examples how portion sizes have increased over the past two decades and the ways to control food portions. The first avenue is changing the dining environment to the way it was 30 years ago with smaller plates, cups, bowls, glasses and spoons, the second avenue is to become more aware of the foods eaten by using visual cues, a dietary journal, and making food less visible and less accessible. Dr. Painter will also discuss current research regarding benefits of, and techniques to increase consumption of healthful foods. An excellent course for individuals and practitioners alike to increase awareness of how much goes into the mouth via the fork!Learning Objectives: At the conclusion of this program, participants will be able to:
- Explain the two primary reasons why many individuals are not aware of their total food consumption and struggle to maintain a healthy body weight
- Name three simple modifications to kitchen and dining area layout that individuals can make to decrease over consumption of food
- Demonstrate food tracking and mindful eating techniques that help increase awareness of amount of food consumed
- Identify four common pitfalls categories that predispose individuals to over-consume food when eating outside the home, including suggestive selling and social pressure
Jim Painter, PhD, RDN, is Dr. Jim Painter is an Adjunct Professor at University of Texas. His current research interests includes heart disease and mindful eating. Jim consults for Sun-Maid Raisin Growers, Paramount Farms, and the National Dairy Council, and he currently serves on the American Heart Association’s Eat Well Task Force and is the Nutrition Advisor for Sugarwise. He worked for Marriott Corporation in the 1980s, taught at University of Illinois during the 1990s and at Eastern Illinois University until 2013 and he has over 100 peer-reviewed publications to his credit.
